1 tbsp melted Golden Age Tallow

2 sheets puff pastry, thawed

8 small eggs

8 slices of ham

½ cup Gruyere cheese, shredded

1 tbsp everything bagel seasoning

1 tbsp fresh chives, chopped

Salt & pepper, to taste
Directions
Preheat your oven to 400°F. Using a bowl or large circular cutter, cut 8 circles out of the puff pastry sheets and place them on a parchment-lined baking sheet.
In the center of each circle, place a slice of ham and sprinkle with 1 tablespoon of shredded gruyere.
Fold the pastry edges up and around the ham to create a rim. Brush the melted beef tallow generously onto the exposed puff pastry edges, then sprinkle with everything bagel seasoning.
Bake for 12 minutes until the pastry is light golden and has begun to puff.
Remove from the oven. Carefully crack one small egg into the center of each galette.
Return to the oven for 6–8 minutes, or until the egg whites are fully set but the yolk remains to your liking.
Finish with fresh cracked black pepper and a sprinkle of chopped chives. Serve warm.
