Ingredients
2 slices sourdough bread
¾ cup shredded Gruyère cheese
2 tbsp fig jam
1 small white onion, thinly sliced
1 tbsp balsamic vinegar
1 tsp fresh thyme leaves
2 fresh figs, sliced
3 tbsp Golden Age Fats Beef Tallow
Salt and pepper, to taste
Directions
In a skillet over medium heat, melt 1½ tbsp beef tallow. Add onions and cook slowly, stirring often, until golden and caramelized - about 20 minutes.
Stir in balsamic vinegar and cook for another 5 minutes, then remove onions from the pan and set aside.
Wipe out the pan and add the remaining 1½ tbsp beef tallow over medium heat.
While the pan heats, assemble the sandwich: spread 1 tbsp fig jam on one slice of sourdough. Layer half the caramelized onions, half the Gruyère, fresh fig slices, thyme, and the remaining cheese and onions. Spread another tablespoon of fig jam on the second slice and place it on top.
Toast the sandwich in the pan until golden brown and crisp on both sides, flipping once and pressing gently with a spatula, until the cheese has melted.
Slice in half, sprinkle with a little sea salt if desired, and serve warm.
