Ingredients

    • ½ cup sour cream

    • ½ cup mayonnaise

    • 2 tbsp freshly grated horseradish

    • 1 tbsp finely chopped chives

    • 1 tbsp lemon juice

    • ¼ tsp kosher salt

    • Black pepper, to taste

    • 1 baguette, sliced

    • 1 tbsp Golden Age tallow, melted

    blank

    • 1 lb steak (sirloin, NY strip, or filet mignon)

    • 1½ tbsp Golden Age tallow

    • Salt and pepper, to taste

    Directions

    1. Preheat the broiler to high. Brush the baguette slices with melted beef tallow and broil for 2–3 minutes until golden brown. Keep a close eye so they don’t burn.

    2. In a small bowl, combine sour cream, mayonnaise, grated horseradish, chives, lemon juice, salt, and black pepper. Let sit for at least 30 minutes to allow the flavors to meld.

    3. Season the steak generously with salt and pepper. In a skillet over medium-high heat, melt the beef tallow.

    4. Sear the steak for about 3 minutes per side (adjust for thickness and desired doneness). Let the steak rest for 10 minutes before slicing thinly.

    5. Top each crostini with a slice of steak, a dollop of horseradish-chive sauce, and a sprinkle of extra chives. Serve immediately.
