This Red, White, and Blueberry Tallow Tart is a stunning, easy-to-assemble dessert perfect for summer gatherings. The secret to the ultra-flaky, golden-brown crust is a light brush of Golden Age Beef Tallow, which provides a superior crunch and a subtle savory depth that balances the sweet cream cheese filling. Topped with a bright lemon-vanilla spread and arranged with fresh raspberries and blueberries, this tart is as visually impressive as it is delicious.
Ingredients
The Tart
-
1 sheet puff pastry, thawed
-
1 tsp beef tallow (Golden Age), melted
-
1–2 tbsp coarse sugar
-
1 pint blueberries
-
1 pint raspberries
Cream Cheese Spread
-
1 block (8 oz) cream cheese, softened
-
1 tsp vanilla extract
-
3 tbsp powdered sugar (plus extra for garnish)
-
½ lemon, zested
Directions
Preheat your oven to 400°F. Place the puff pastry dough on a parchment-lined baking sheet.
Use a knife to lightly score a 1-inch border around the edges (do not cut all the way through). Prick the center of the dough several times with a fork to prevent it from rising too much.
Brush the edges of the pastry with the melted beef tallow and sprinkle with coarse sugar for a sweet, crunchy finish.
Bake for 20 minutes, or until the crust is deep golden brown and crisp. Remove from the oven and let cool completely (about 15 minutes).
While the pastry cools, use a hand mixer to combine the softened cream cheese, vanilla, powdered sugar, and lemon zest. Blend until the mixture is light and smooth.
Spread the cream cheese filling evenly within the scored border of the cooled tart.
Arrange the blueberries and raspberries in diagonal rows (or your favorite patriotic pattern) across the top.
Dust lightly with powdered sugar just before serving.
Recipe Note
Brushing the edges of your puff pastry with Golden Age Beef Tallow instead of a traditional egg wash creates a noticeably flakier, crispier crust. The high-quality fats in beef tallow enhance the pastry's natural layers, making this berry tart stay crisp even after the cream cheese filling is added.
