Spinach and Feta Puff Pastry Bites

Golden, crisp, and full of herby flavor, these spinach and feta puff pastry bites are the kind of snack that disappears before they hit the plate. Layers of buttery puff pastry wrap around a savory mix of spinach, scallions, dill, and creamy feta, brushed with beef tallow for that deep, flaky finish. Topped with sesame seeds and baked until golden, they’re simple, cozy, and perfect for entertaining or for eating straight off the baking sheet!

Ingredients

1 package puff pastry (2 sheets, thawed)

10 oz frozen spinach, thawed and liquid squeezed out

½ cup scallions, finely chopped

2 tbsp fresh dill, chopped

½ cup fresh parsley, chopped

1 cup feta cheese, crumbled

1 large egg, lightly beaten

1 garlic clove, minced

Salt and pepper, to taste

2 tbsp Golden Age Fats Beef Tallow, melted

Black and white sesame seeds, for topping
Directions
Preheat oven to 400℉ and line a baking sheet with parchment paper.
In a large bowl, mix together spinach, scallions, dill, parsley, feta, egg, and garlic. Season with salt and pepper.
Cut each puff pastry sheet into squares (about 12 per sheet).
Add 1 tbsp of the spinach filling to the center of each square. Fold into a triangle and press the edges to seal tightly.
Brush the tops with melted beef tallow and sprinkle with sesame seeds.
Bake for 20–22 minutes, until puffed and golden brown.
Let cool slightly before serving warm.
Recipe Note
Swap feta for goat cheese or ricotta for a creamier filling.
