Ingredients

1 French or sourdough baguette, sliced diagonally

2–3 tbsp Golden Age Fats Beef Tallow, melted

9 oz goat cheese, softened

5 oz cream cheese, softened

1 tbsp fresh thyme leaves

2 tbsp heavy cream

¼ cup bacon jam

1 apple, thinly sliced

Extra thyme, for garnish

Salt and pepper, to taste
Directions
In a skillet, melt the beef tallow over medium-high heat. Add baguette slices in batches and toast on both sides until perfectly golden and crisp. Set aside to cool slightly.
In a food processor, blend goat cheese, cream cheese, heavy cream, and thyme until smooth and fluffy. Season with salt and pepper to taste.
Transfer the whipped cheese mixture to a piping bag or a zip-top bag with the corner cut off.
Pipe a swirl of whipped goat cheese onto each crostini.
Top with a small spoonful of bacon jam, a thin apple slice, and a sprig of thyme.
Arrange on a platter and serve immediately, or refrigerate and bring to room temperature before serving.

Unlike butter, which contains water and can make bread soggy, beef tallow is 100% fat. This allows the baguette to fry slightly as it toasts, creating a "shatter-crisp" exterior while the inside stays soft.
